Goodness gracious duck pastilla
Ingredients (6 pers.)
500g confit duck thigh meat
100g almond powder
1 teaspoon of cinnamon
3 phyllo paste leaves
3 tablespoons of melted butter
100 ml chicken broth
Preparation
Dissolve duck meat; add almonds ans cinnamon, moisten a little the preparation with chicken broth.
Cut phyllon paste leaves in four. Whitewash 2 quarters of melted butter with a pastry brush. Overlay it by crossing them. Lay 100g of pastilla mix in leaves center, Pull down paste to obtain a cylindrical bun. Bake 375°F oven 10 minutes. Sprinkle a line of cinnamon in the same way of a line of sugar glaze.
Cranberries chutney
Ingredients :
1 kg de cranberries
1 onion
300 ml of vinegar
200 g brown sugar
salt , pepper, 2 laurel leaves
1/2 teaspoons cannamon
1/2 teaspoons ground ginger
1/2 teaspoons ground nutmeg
Preparation
Slice thinly the onion. Boil all ingredients, let simmer ± 20 minutes.
Put in pot right now in sterilised pot. Seal up promptly.
